Yes, I totally agree with with Illini about
the pasteurized vs ultra-pasteurized milk and MAP potential! That said, to make SCD legal yogurt, you bring the milk to a boil and cool it back down to add the yogurt cultures. The purpose of boiling the milk--as the SCD instructions state--is to kill any bacteria you DON'T want fermenting there in your yummy yogurt. Therefore, any kind of milk should be fine since you boil it in advance! Now, if you choose organic milk for its purported high omega 3,6,9, that's good, too! Me? I've been buying the cheaper milk and taking fish oil supplements and flax seed oil for my omegas...
I'm hoping someone comes along who has made the cheese! (butterfat, are you out there?) I need tips on that, too!!!
