I am looking into starting the SCD, but I tried the dry curd cottage cheese. It was discusting and wonder if anyone has any suggestions. Is it ok not to use it in the diet? Yuck. I was wondering also if the cheese cake recipe in the book taste good or is it gritty like the cottage cheese?

I wish I could find the dry curd cottage cheese. So far, I haven't been able to. I suppose it's one of those things I would only use in recipes, though. It doesn't sound too appetizing. I would love to try the cheesecake recipe, but it calls for the dry cottage cheese. eyes Where did you find the dry cottage cheese?

Yes, it's definitely okay to do the SCD without the dry cottage cheese. It only limits your recipe options a little bit. But another option that I have not yet tried is to make the homemade SCD yogurt and "drip" the yogurt. This leaves you with a "cheese" that can be substituted for the dry cottage cheese in recipes. I hope to try this soon..... If this really works, the cheesecake recipe should turn out great because the homemade yogurt is very good--not gritty as you described.

The process of "dripping yogurt" is explained here in the second paragraph: http://www.breakingtheviciouscycle.info/knowledge_base/kb/yoghurt_scd.htm
