raw chocolate protein cookie

i got the idea for this from my brother. it took me a few goes, but i got a recipe i like now. makes a great healthy snack and good for post work out too. now you can have cookies and not feel guilty (or at least as guilty).

1 cup chunky almond butter
1/2 cup agave nectar or honey
2 big scoops chocolate whey protein powder
1 tbsp cocoa powder
1 tbsp coconut oil
2 tbsp ground flax seed
2 tsp orange extract*

combine all ingredients in bowl and mix together using hand mixer. line cookie sheet with unbleached parchment paper. scoop out dollop size cookies onto parchment paper. place cookie sheet in freezer. once cookies are firm (few hours), remove from parchment paper and store in plastic bag in freezer. (yield: about 16 cookies)

*trust me - it tastes super good using the orange extract - gives it a flavor you arent expecting.

surgery in July '05 - removal of 2 inches at ileum and 8 inches of sigmoid colon (had fistula into bladder)
Nov '05 developed colonic inertia; July '06 told i needed ostomy surgery
began maker's diet in August '06 - now feeling the best ever with no symptoms of colonic inertia and i kept my colon
med free as of 10/31/07

CH, this sounds really good! Thanks! Where do I find orange extract--there with vanilla, almond, peppermint and other extracts? Also, I take it you're okay with cocoa? I know it's not on the SCD program... And I can't recall if it's addressed in the MD.

It would probably also be good with that very finely shredded organic coconut, too. Just a different texture... oh yeah, the texture thing... skull

Those sound really delicious :) Do you have to add the flax seed to help with the texture or can you omit that? I already have an active enough digestive system haha.
20 years old, Diagnosed with severe Crohn's and colitis in May of 2008.
Currently taking:
Prednisone, pentasa, alinia, bentyl, prilosec, tandem plus, and the occasional ultracet
Surgery for ectopic pregnancy(very possibly due to Crohn's inflammation) in July of 2008.
Due to start Imuran September 17 depending on blood results.

i thought about the shredded coconut, but i didnt see it working well in this. too many flavors and the coconut being overwhelmed by the chocolate. but give it a try and let me know. in this recipe it would act like a flour thickening the batter, hence you'd need more liquid, so more sweetener (but i think 1/2 cup is enough as is) or you'd need to add an egg or two, but i dont like the idea of raw egg in anything being stored. i guess you could cut it with water. the coconut oil is really in there to add the benefits of coconut oil, hence only the small quantity so as not to compete with the other flavors. yeah, i'm pretty sure chocolate is illegal on the scd, but a little like this wont kill you. i'd have to look it up on makers, but i would suspect it would be ok as long it was organic and minimally processed (GOL perfect food comes in chocolate, and jordan has a recipe for fudge, in which i believe he uses carob chips). the cocoa powder is used to increase the chocolate taste as most chocolate whey protein powders are weak in the flavor department. it also counters the almond taste of the almond butter. orange extract is found with all the other extracts. i thought about peppermint (big peppermint fan) but choco/mint has been done. the orange comes out of left field. oh, cocoa doesnt bother me, but then i dont have it often and when i do it is small quantities such as this (1 tbsp divided over 16 cookies - not very much).

yes, you can omit the ground flax seed. or you can substitute a fiber supplement (i'd recommend superseed by garden of life). since the flax seeds are ground, you dont notice them. the texture comes from the chunky almond butter, not the flax seeds. the flax seeds are more for upping the omega 3 content of the cookie. since it is a small amount, it doesnt really lend any flavor to it and is really just another healthy ingredient. i am sure if you omitted it the taste would not be altered.




basically the almond butter is the base (the fat). the whey protein is just that - protein. the agave nectar is a natural sweetener and hence your carbs. boom - all 3 macronutrients in more or less healthy, minimally processed forms. the rest of the ingredients are filler, so to speak, in that they arent essential, but they do add other healthy things or flavor.

i wonder how this fits into the zone diet for athletes with regards to the 40/30/30 breakdown....
