I'm only 2 months in to SCD, and am following the stages from pecanbread.com. I just started Stage 2, and the pecan butter brownies are fantastic! I limit myself to one a day, but could easily gobble up several more. A lot of people rave about the nut butter/nut flour bakes goods, so you probably just need to try some different recipes. There is a woman named Marilyn on the BTVC yahoo group, and she is a great SCD cook. All of her recipes seem to be a hit.
As for sides, right now I'm just having well-cooked/peeled/de-seeded vegetables (carrots, zucchini, spinach, green beans) and fruits (apples, pears, peaches). I'll be adding squash and asparagus pretty soon. As long as everything is cooked, I can tolerate it. I also just started taking enzymes to help break down the food my body isn't doing my itself.
