I like using Bisquick's Low Fat flour mixed with non-fat dry milk to make biscuits. It's the closest thing to a "real" bisquit that doesn't taste or smell funny from altering a recipe. Doesn't resolve your bagel/croissant issue but I thought I'd through it in the idea box. I am also lactose intolerant and can handle these.
