I strictly follow SCD, which is gluten free. I felt results pretty quickly, but then SCD also restricts sugar, lactose, and starch. I've had to learn to cook most everything from scratch, because like you said, gluten and whatnot is is everything. Read labels very carefully, and shop at store like Trader Joe's or Whole Foods. They carry a lot of gluten free products. Some restaurants have gluten free menus these days, like Outback Steakhouse.
