Well its basically a custard with pumpkin thrown in, so it could be the fat content of the egg yolks, or all the cream. If it was homemade, that is. If it was made commercially, it could have other ingredients like preservatives and thickeners. Plus there are usually a few other spices in a pumpkin pie. Some people use a "pumpkin pie spice", I'm not sure what is in that. But most likely it has some clove, ginger, maybe some nutmeg and possibly some allspice along with the cinnamon.
So did I give you enough things to investigate? For me, I know the pecan pie will bother me, so I eat one or two pieces over the weekend, then the rest has to leave the house, so that I can't hurt myself anymore! But I love pecan pie, and unless I have a full blown blockage, I am having some on Turkey day!
