FODMAP Gluten Free Brownie Recipe (for Ivy and everyone who is on a GF diet)

50g best quality GF dark chocolate
100g butter
200g caster sugar
2 eggs lightly whisked
1/2 teaspoon pure vanilla extract
75g ground almonds
1/2 teaspoon GF free baking powder
pinch salt
110g chopped walnuts
 
Line 20cm square baking tin with baking paper and preheat pven to 180 celcius/350 farenheight/gas mark4.
 
Cream butter and sugar until pale, soft and light, then beat in lightly whisked eggs, vanilla and melted chocolate. 
 
Stir in almounds, baking powder, salt and chopped nuts.
 
Spread into prepared tin and bake 30 - 35 minutes.
 
Leave to cool then cut into 5cm squares.

Ooooh, yummy yummy yummy.

It sounds a bit like (but more decadent) than the almond butter SCD brownies that Spooky says she eats for breakfast. I Googled those, and found many variations, but all sounded lovely.

Hmmmmm. I think I might spend more time on pecanbread.com again - lots of recipes there that we could easily adapt for fodmap.

Thank you very much...I am missing sweets since going GF and have been looking for things to bake that I can eat...would really love banana bread and cinn bun recipies...chocolate chip cookies as well...

Any ideas on GF would be wonderful!!

white sugar but finer ground (not icing sugar though) - you buy it in the supermarket here but you can use plain sugar and blitz it a bit in a food processor :)
