It's a good link but I differ from what they say about the winter squashes and carrots. I believe that the nutrients in those veggies far outweigh their higher carb count and I use them in moderation with a small amount of butter to enhance the Vitamin A absorption. I also used canned pumpkin as a veggie for my family. I heat it with butter, cinnamon and a bit of artificial sweetener and they love it! One only needs about two tablespoons of squash to get a few days supply of Vitamin A along with whatever else bioflavinoids or micronutrients or goodies they supply.

I've eaten a few Yellow Crookneck Squash this Summer and I do occasionally munch on raw Carrots and eat cooked Carrots occasionally for the Vitamin A and Eyesight benefits.Thanks for the Pumpkin Recipe idea..will give her a try tongue
