pumpkin-cream cheese pie  (no crust needed)
1 small can pumpkin
1 package cream cheese  (Philadelphia 1/3 Less Fat has the fewest carbs)
2 eggs
spices you like (cinnamon, ginger, nutmeg, cloves, allspice)
@1/4 c heavy cream (optional)
1/4 t salt
artificial sweetener to taste
Mix these all together at medium speed in your mixer, and spoon into a glass pie dish.  Bake for 15 min. at 425, then about 50 min. at 350.  It will puff up and then settle.  This is a good substitute for regular pumpkin pie.
1 package cream cheese
4 oz. baker's chocolate
@4T sugar free DaVinci Vanilla syrup (or 2T vanilla flavoring and artificial sweetener of your choice)
8T heavy cream
Melt the chocolate and add the cream cheese and cream.  Simmer.  Add the DaVinci syrup (or vanilla and sweetener) and stir.  Taste and add more sweetener to your taste.  Cook until it thickens and is well mixed.  Spoon into a greased glass baking dish and chill in refrigerator until firm and then cut into individual pieces.
(I haven't made this fudge yet.)
protein bars
2 squares 85% dark chocolate
2 T natural peanut butter (I used crunchy.)
4 T butter
sweetener to taste
@4T heavy cream
1/2 c unsweetened coconut flakes (optional)
1/2 c chopped nuts
@1 1/2c chocolate (or vanilla) protein powder 
1/2 c TVP (optional)
4T sugar-free DaVinci vanilla syrup
Melt chocolate, peanut butter and butter, stirring until mixed.  Add sweetener and cream and mix.  Add DaVinci syrup and vanilla and then everything else.  (Note: along the way, be sure to adjust it to your taste, and be ready to adjust the consistency so it's not too liquid or too crumbly, which means a dab of butter or some cream or more protein powder.) It will be very thick and you'll end up using your hands to knead it.  Press it into a glass baking dish and refrigerate until firm and then cut into pieces.  They freeze well wrapped in plastic.
