I've been looking more into using flat breads, rather than using the traditional loaf. I'm keen to know if anyone has info on the pros and cons. I like to look at it from the glycemic index point of view. Some pita breads seem to be OK but others are off the charts. It all seems a bit hit and miss. Anyone have any definitive answers?
