Oh gee, I suppose there are explanations including individual metabolism rates. I would probably have spiked early on and stayed high for more
than 2 hours if I'd eaten all those carbs. For some reason I don't come down fast after a lot of carbs. I stay elevated and then slowly come down. I know that from the beginning of my journey here, which helped reinforce my decision to go low-carb.
