Not really mousse but you can call it what you want, maybe berry parfait.  I hardly ever measure because most everything I prepare is by taste, so, here goes.  I have one of those Braun sticks with a whipping attachment and a tall plastic container for it, but you could use a beater in a bowel, too.

about 1/4 to 1/2 cup of heavy cream
about 1/4 of a package of cream cheese (look for the package with the least carbs; I use Kraft 1/3 less Fat.)
about 1/2 cup of blueberries/raspberries or black raspberries, mashed up,  or a combo (these seem to be more blood sugar friendly)
artificial sweetener to your taste

Beat all this together until light and fluffy.  Taste and adjust the sweetener.  Serve immediately or store in the refrigerator.

Perfect! ... or as the French say "parfait" :-)

Now I have something to do with all my ripening raspberries and saskatoons.  I just did a bit of reference research on berries at http://www.nutritiondata.com

(roughly similar, half-cup servings)

NAME                  CARBS    SUGARS     FIBRE     GL (Glycemic Load)

blueberries          21g        15g            4g          6
strawberries       12g           7g            3g          3
rapsberries         15g           5g            8g          3
cherries (sweet)  22g        18g            3g          7
cherries (sour)    19g         13g            2g          6

Somehow, I thought strawberries would be the worst but not so bad apparently.

Bless your pea-pickin' heart, Chris, for all that great information about berries!  It looks like strawberries and raspberries do the least damage but as always YMMV.
