lacy cheese cups (for appetizers or salads)

Finely grate gruyere cheese onto parchement or freezer paper in a circle about 4 to 5" in diameter, covering the paper so you can't see the paper through the cheese.  Microwave on high for about 30 seconds.  (Here is where you might need to tweak it because microwaves are all different.)  The cheese will look sizzling just on the verge of browning.  Carefully lift the cheese from the edge and it should come off the paper as one whole circle.  Immediately place the cheese over the bottom of an upside down juice glass and gently hold the cheese to form around the glass.  In about 1 minute it should be cool and stiff.  Take it off the glass and place it on a salad plate.  Now you can fill it with anything you want: chicken salad, guacamole, shrimp salad, shredded lettuce salad, or whatever you want.

I have to say that it took a couple of trials to get the cheese lace cups just right but once I did, the results were great.  And they make such a 'cute' presentation on a salad plate.  Last night I surrounded them with some shredded lettuce drizzled with olive oil and filled the cups with guacamole.  I had tried grated romano but it didn't work well.
