i have been newly diagnosed with type 2 diabetes.  I have told some of my close friends about my condition but am not ready to tell friends that i am not so close to just yet.  I am having casual friends around for dinner, and was wondering if anyone could suggest a dessert that is good for me, without being too plain/healthy for them. Really looking forward to some help with this.  Thanks

You can do numerous things with sugar free pudding and cool whip.  Favorite here is layered chocolate and vanilla parfait.  Also, check the web for recipies, especially the Splenda site.  :-)

Apple crisp made with splenda instead of sugar is excellent and there's a glut of apples this year. The secret for you is to simply limit your bread and starch (potato, rice, corn or pasta) at the meal and have a small piece of dessert. I will often allow myself a small brownie or oatmeal cookie for dessert when I have had 1/2 a potato and no other starch. My family doesn't really notice because I take my salad on my dinner plate and it takes up lots of space along with my veggies and meat.

Another delicious dessert is to take a store bought angel food cake and slice it into 3 or 4 layers. Fill the cake between the layers with a wonderful topping. Use low cal cool whip or real whipped cream sweetened with splenda and mix in chopped pecans or walnuts. Remember it's the carbs, not the fats that make your blood sugar go up and although you need to limit fats overall, we are talking dinner party here. Layer this fluffy cake, fluffy filling and top with the filling. You do not need to ice this. Drizzle some chocolate syrup back and forth over the top so it looks like something from a cooking show and hit it with a dusting of powdered sugar. This is a light desert if made with the low cal cool whip and a delightful end to a meal. You can make the ingredients in the morning and assemble it in just a few minutes before your guests arrive. Hope your party is smashing!

Thanks for the excellent ideas so far. Just looked at splenda websites recipes and has given me ideas for all courses, not just desserts.
