They've just tested a potato here (Australia) which has a GI of 58!  Quite impressive.  It's called Nicola. 
Yes, I know that GI isn't the be-all and end-all of things and that even with that sort of GI, potatos should be eaten in moderation.....but still!!

I haven't had a potato since I ran out of Avandia in April... so frankly my dear... I don't want to hear about your dumb potato!!! SO THERE!!! LOL!

So was it good? And did you have some real butter and sour cream on it? MMmmmmm!

Haven't tried one yet Jeannie!  But I'll take on board your serving suggestion and let you know!
Hopefully we'll be able to track some down.  My good lady makes a smashing shepherds pie with a potato/sweet potato top.  Using these new spuds will make me feel a little less guilty (and blood sugary) about eating it.  My serving suggestion for the day is: With your shepherds pie, have some baked beans.  Bliss.
