recipe: mashed cauliflower to replace mashed potatoes

Here is a suggestion for a tasty vegetable dish that is a pretty good substitute for mashed potatoes.  I've made it and will definitely be serving it at Thanksgiving and Christmas.  This comes from Bernstein's The Diabetes Diet book.  Steam 1/2 head of cauliflower until soft.  Put it into a bowl, pull the florets apart and mash them with butter, heavy cream and salt and pepper to taste.  The book says this will make 4 servings with 4.8 g. carbohydrate a serving.  Warning:  if you boil the cauliflower as I did, it will be rather watery.

Nice. It also makes a fantastic topping to a fish pie or a shepherds pie. I always steam rather than boil it though, it probably retains the vitamins better. Oh, and I grate some cheese in there to give it a good consistancy, and an egg so that it browns nicely on top in the oven.
