Hostas - Question about salad bars

I saw that you said you avoid salad bars because of Preservatives used... I'm curious here. I worked as a salad chef for a large resort when I was a teen and I learned that the preservative used on lettuce's and fruits to keep them fresh is ascorbic acid, common name Vitamin C. Grandma used to put lemon juice on apples to keep them from turning brown, same thing. The pickles and olives at the salad bar are preserved with vinegar and salt, both very harmless. So my question is what are you avoiding? Have I missed something?
