I used cauliflower and orzo wheat rice, the cauliflower needs to be a tad over cooked to get mushy. I added chives, garlic, goat cheese, parm cheese made of goats milk, parsley. soy milk and no salt butter. I can't have any cow products. You need to really mush it, I used my hand mixer because I have no strength for a potatoe masher. If you want amounts I will try and remember for you. You can also use barley instead of the orzo rice.
