Off topic - eat anything yummy lately?

I'm so tickled to have my appetite back. I do love food. That made me wonder, have you had anything yummy to eat lately? What was it?

Tonight for the first time I made poached alaskan cod for dinner. Oh my gosh, I loved it. This is from a woman who barely likes fish. I wanted something easy for the digestion, and something I could make once a week to up my intake of healthy fish in my diet. Ding ding ding! Winner.

I just took a 2-quart sauce pan with lid, added about 1 or 2 inches of clean drinking quality water, chopped up half a carrot, half a stalk of celery, two slices of lemon, generous salt and pepper. Cooked the poaching liquid for 15-20 minutes. Then added the cod fillets for 10 minutes. Serve with baked potato, broccoli, and half a toasted hard roll. Butter on the cod. Yummmmmm. I could learn to like fish if it all tasted this mild and non-fishy.

So what'd you have lately that you thought was yummy?

My husband cut a huge zucchini in half, scooped out the pulp and stuffed it with a bread crumb,  chedder cheese, Miracle Whip and  canned salmon mixture.   Baked it of course....it was yummy!!!

Wow, now that's creative. I bet it was fantastic - and all those ingredients sound good for you. What a great meal.

I wish I liked fish.
Last night I baked my son's birthday cake while prepping for my colonoscopy. Hadn't expected to, so didn't have all the right ingredients. All I had was olive oil, and maybe that explains this - the cake hardly rose at all. But, you know, it was extra-moist and tasty!

Hi all

Tonight for dessert my husband and I are having (bearing in mind we are trying to lose weight), peach and mango yoghurt with passionfruit from my vine, very tropical and of course the yoghurt is low fat. My mouth is watering just writing about it.

It's delicious, you should try it sometime.

Dx: Fibro, HTN, Depression, IBS, Lupus like symptoms

Sue...it wasn't eggs he used...it was Miracle whip...sorry!  And he used flavored bread crumbs.  I don't cook much...I just eat and ask what's in it.  We served this for friends a few weeks ago and all of them when home with the recipe.

So sorry...I changed the ingredients on my initial post.  Oh, the Humanity!

Well my friends nothing healthy here lol. I have learned to love the mocha frappes at McDonalds. I am lactose intolerant and have not been able to have shakes in a long time. But I can drink these and they are so good. I also have orders from my drs. to eat and drink what I want in order to keep nutrients in my body so sorry if this isnt a healthy one.

Shirley - no need for the yummy item to be healthy. :D Glad those Mocha Frappes are making you happy and go down well. (I'm lactose intolerant, too.)

You've all succeeded in making me hungry. LOL

Achey - I bet the cake was yummy. I've experimented with using like 1/3 to 1/2 of the required oil as olive oil in cake mixes. Turns out pretty nice. Had a cooking magazine from years ago with recipes for cakes specifically for olive oil - I must dig that up again. One was a plum cake. Sounded heavenly.

Donna - if you want to post the recipe, that'd be cool. :)

Harrington & Sue - I love yogurt so yours both sound yummy to me. I always liked fresh homemade yogurt with black raspberries. *drool*
