Last night I got a flash of energy and inspiration and made a great dinner.  I sauteed a piece of salmon in dairy free margarine/bit of oil with salt and pepper until it was crispy on the outside. 
 
Can't do vegetables, so I made a hot fruit salsa out of half a mango, half a can of pears and a few dried apples rings.  Sauteed the fruit in some dairy free margarine, added some of the pear juice, a splash of hot sauce, drop of gf soy sauce and a light sprinkle of cinnamon sugar.  Brought it to a boil and simmered for 5 minutes - the sauce thickens.
 
Plated it and brought it to the table and it looked like a gourmet meal.
 
Can't think of what to have tonite so it will probably be Glutino pretzels and almond butter.
 
So what are y'all having for dinner?
Presently on: 600 mg. Remicade every 5 weeks
                   Venofer infusion every 5 weeks
                   B12 every 5 weeks              
                   12 Asacol daily
                   Zofran as needed

Tonight we're probably having salmon, LOL! We must think alike!

Last night I made a risotto with shrimp....yum!

Last night I fixed hamburger,lotsa onions,tomatoes,over rice.I just finished it off awhile ago.Dunno what Larry will have,lol.........

Last night I cooked some quinoa spirals in one pot. In another I sauteed some chopped fresh mushroom and at the last minute I threw in some cooked shrimp and dairy free margarine and a dash of hot sauce. Let it simmer a bit and then tossed it with the cooked pasta. It was delicious, safe, satisfying. I even have enough for Saturday lunch!
Presently on: 600 mg. Remicade every 5 weeks
                   Venofer infusion every 5 weeks
                   B12 every 5 weeks              
                   12 Asacol daily
                   Zofran as needed

always on the run everything has to be quick so i grill @ burgers get the Katz gluten free large challa rolls ketchup and musterd and its heavan

Last night I made 2 grilled cheese sandwiches from the Katz gluten free challah and daiya cheddar cheese shreds because one just wasn't enough.  That bread is so yummy the sandwiches were delicious. 
 
The night before, I sauteed some beansprouts with mushrooms and leftover chickern from making homemade soup and added some gf soy sauce and hot chinese mustard.  Then wrapped them up in softened rice paper wrappers.  Mmmmm...
 
Tonite is going to be steelhead trout sauteed in dairy free margarine until tender and crusty served with spaghetti squash and a grilled portobello mushroom
