Glutened, Glutenated, Glutenized?

On Thanksgiving, my mom had given me some turkey to eat. I didn't even think about asking if it came into contact with gluten, because she knows about my Celiac. Later that night I became so sick. I had severe nausea, bloating, stomach cramps, and a migraine. The next day I found out that the turkey had been stuffed with stuffing! I knew that I was in for a lot of trouble right then.

Since then I've been having nausea everyday, a migraine, and slight stomach cramps. I can only eat plain fruits and vegetables, because everything else makes me terribly sick. I also drink a lot of water and fruit juices.

Any advice on what I could do to help this pass more quickly?

Already heard of digestive enzymes and I'm going to try taking some tonight.

What happens to you when you accidentally eat gluten?

The last time that happened to me I had about 3 weeks of stomach and bowel problems. I don't have celiac disease though - I'm just intolerant. I think you're going to have to wait it out.
50 yrs old, IBD diagnosis in spring '01. Proctitis, gastritis, ileitis.
Currently taking Pentasa (3g/day)generic Colazal (96 pills/day), Sulfazine (1.5 g/day), Prevacid, folic acid, vit. D (2K iu), flax seed oil (2 tsp/day), psyllium (1/2T daily), mesalamine enema as needed. Gluten free as of 5/30/11. Colonoscopy found no evidence of inflammation on 8/16/1
