I am the same as you and I have cfs and what you are saying sounds a lot like cfs. i would get a few things done first though like a sleep study to rule out sleep anea/restless leg syndrome, check your adrenals, check for celiac disease (test for anti-transglutaminase igA and igG antibody, ), check serum ammonia level, iron levels if you haven't already. . for the hunger part have you tried eating a healthy snack before bed?
