Running out of ideas to help treat CFS! Ebstein Barr?

I have been suffering with chronic fatigue since I was 14 years old; I am now 25. It has gotten significantly worse over the last couple of years. I've had SEVERAL lab tests done over the last few years; actually, I just got more blood work done less than a month ago: inflammation/C-Reactive protein, auto-immune, thyroid, cell count, hormones. I've gotten checked for Celiac, allergy testing, etc. Everything came out normal.

My symptoms consist of:
* Chronic fatigue. I just want to sleep all day. I can fall asleep at any given time of the day despite now many hours I slept the night before. This has been going on for 11 years.
* No energy
* Chronic dry eyes - this is one of my worst symptoms I have been suffering from for about 5 years. I've tried EVERYTHING - about 10 dry eye specialists, plugs, Restasis, OTC drops, inserts, moisture goggles, stop wearing contacts//stick to wearing glasses, warm compresses, a procedure called LipiFlow, massaging, etc, and nothing helps...not even temporarily. My eyes are just as dry with contacts as with glasses, and there is DEFINITELY a correlation between fatigue and the dry eyes. When I am more tired, my eyes are a lot drier.
* Brain fog: This symptom came about a year ago. I forget what I'm saying in the middle of my sentences. I stumble on my words and sounds like I'm honestly dyslexic. I forget easy grammar, such as where apostrophe's go, or if it should be are/is and things like that when I am talking or typing. I over-think and get more confused. This is very embarrassing and frustrating.
* Terrible anxiety: I've had this for years as well, but I am not depressed. I have a wonderful, supportive family, amazing friends, a great job working with children which is what I always wanted to do. I think suffering from all of this has made me this way.

I've tried yoga, acupuncture, changing my diet to gluten free/less sugar/more green vegetables, seen countless doctors, go to bed early, exercise every single day, so many different vitamins, etc. I like natural treatments.
The only concern I have is my Ebstein-Barr Level. I got checked for it in Dec. 2011 and my level was almost 600! It was off the charts! Doctors didn't seem concerned as their response was: 99% of people have it and there is no cure and that won't cause all of your symptoms.

So I don't know what to do!

What have you tried?

For me, I have found that diet is the key. If I am VERY careful about what I eat then I can control - not get rid of) the symptoms to a manageable level.

Inflammation loves an acidic environment, thus you need to focus on creating a more alkaline one. Absolutely NO junk food, sugars and very little grains. LOTS of fruits and veggies, fresh juicing, etc. Do some research and try it for a couple weeks and see if it won't help.

The dry eyes make me think your electrolyte levels may be off. One theory about a cause for CFS is low blood pressure. Our society promotes a low salt diet but recent studies show that people who get too little salt have a higher incidence of heart related death than people who get enough salt. You also mentioned eating a more natural diet. I've noticed the more natural I go on my diet the less salt I've been using and unfortunately, the lower my salt levels and my blood pressure levels are. I even ended up in the emergency room for this. Now I make homemade electrolyte using about 1/8-1/4 tsp of sea salt mixed with 1/8-1/4 tsp of Morton Light salt. I add about a 1/4 cup organic apple juice and then fill up the glass with water. After I drink this I start to feel better and usually the next day notice that my skin is more hydrated and my eyes don't feel so dry.
In the beginning you may feel so much better that you want to drink the electrolyte all day long but I think you can make yourself too alkaline and all the sugar from the apple juice is not good. Candida albicans likes sugar and an alkaline environment.
