I have to say something about
this just cracked me up. Just brought on visions of scooping up mashed potatoes with my hands and shoveling them into my mouth!
I love them mashed, baked, pretty much any way. They're my comfort food. But one slightly unusual version is Italian potato salad my mother used to make. You boil the potatoes (peeling is optional - depends on whether you like the skin and hte look), cut them up, then soak them with lots of vinegar and a little olive oil. Salt and pepper (I use lots of pepper) to taste. That's it. No mayo.
I love to use a lot of vinegar!!
