I like taking a good size beef chuck roast and browning it in a skillet and then putting it in the oven surrounded with lots of onions carrots and celery and potatoes and then slowing roasting it, after about an hour I pour in enough water to not quite cover the beef roast completely, and then let it go another hour, then take it out, pour all the juice into the crock pot, cut up the roast and the vegetables and throw them in, add a can of beef broth( if there is not enough from the roaster pan) and a couple cans of V8 Vegetable juice and pack or two of frozen mixed soup vegetables and let it slow cook in the crock pot for a few hours, and then add the barley after it has cooked for a while it is SOUP TIME!! Your home made potato rolls with lots of butter on them would go great with this! I normally buy potato bread at the store and just put lots of butter in it and eat it with the soup.
The other soup I make is chili, I use a pound of 85% lean ground beef and a pound of Bob Evans or Jimmy Deans or what ever brand of original sausage, I fry them up really good with lots of diced onions and garlic ( til the meat gets a lit brown crisp on its edges) then I put it all in a crock pot (( I also put some water in the skillet and stir it around to get all the meat juices and then add that to the pot) then I put in a couple cans of rinsed off dark red Kidney beans, and a couple three cans of dice tomatoes with green chilles, and a couple of cans of stewed tomatoes, and couple of cans of V8 vegetable juice and a can or two of V8 mild Picante Juice, add some chilli powder, and let it slow cook in the crock pot till your ready to eat!
Both of these soups are great when the fall weather get here and the air gets that nip to it!
