I agree with the above - Gluten Free will only work for people who can't tolerate gluten. Some people are allergic and some people are just intolerant. If you aren't seeing a difference, I would venture a guess that gluten is not what is causing you symptoms.
There are other diets that you could try. Gluten free foods still tend to be high in processed sugars, which do upset some people. I am currently trying to follow the SCD diet - which eliminates disaccharides (double molecules) and polysaccharides (chain molecules). I have been pretty sick from inflammation and infection the last month or so, so I can't tell if anything is working much yet, but it does give me a sense of control over my disease. I will be able to see more or less of an effect once I wean off the prednisone and continue with a maintenance med.
I would discuss other options with your dietician, or like NCOT said, be VERY STRICTLY no-gluten for a month, which will really let you know if that is your need or not.
