CrohnsPanda, I'm glad that you have opted for a diet change and supplementation to combat Crohn's disease. Congratulation on weaning off Remicade. As far as the supplements are concerned, I would suggest you to include Betaine HCL (gastric acid capsules, the same acid produced in the stomach), Anti-Candida supplement. I'll post the link to the products below. However, you can buy other brands as well.
Some research suggests that one of the reasons for Crohn's disease could be Mycobacterium avium subspecies paratuberculosis (MAP), but other researches suggest it could be caused by an imbalance in the gut flora; outnumbered by harmful bacteria like Campylobacter Concisus, E. Coli, Salmonella etc. to name a few. According to the information on the internet, MAP is a super bug. It supports the growth of E. Coli and other harmful bacteria.
I see that you have made a big change in your diet. You may probably get more results with a low carbohydrate diet. I would suggest you to read any of these book, "Breaking the vicious cycle, GAPS diet, Plaeo diet". You can also join the yahoo group where there are lovely people that are ready to help anytime.
