Was going to make these from scratch but have been sick with bronchitis so hubby bought a box mix by Krusteaz (about $2-lot cheaper than buying ingredients) and made them yesterday. They were excellent!
 
I did look online and Paula Deen has a good easy recipe online. Southerners tend to make it very sweet, so you can lessen sugar. Also you can make lime bars-yum!!
 
You cook crust first-it will be pale, don;t overcook it (mine took 9 minutes and pour the lemon mix over hot crust and let set for 1-2 hours (it's jiggly when it comes out of oven) and enjoy

I've got a trip to the store for a few items today. I'm glad you posted this. Will pick up some Krusteaz, we like lemon stuff.

What is "Krusteaz"? Is it a premade pie crust like? Just wondering....

It is a box mix, usually by cake mixes and brownies and such-sooo simple and good. they make bread machine mixes too and crumble cake, good qualityeespecially for price. When we had our bread maker, they had some specialty whole grain bread mixes we liked. We had to get rid of bread maker cause we would eat the whole loaf before it cooled off-lol!!

I have been eating too well. Gained five pounds thru the holidays, but lost two so I am getting back there.
