I think they're emphasizing fiber because fiber helps to control spikes in blood sugar. The theory is that the more fiber a food has, the better it is for evening out blood sugar.
BUT just because the food has fiber doesn't mean it's controlling our blood sugar! Different people will have different blood sugar reactions, so the bottom line is testing our blood sugar two hours afterward.
