Back on March 28th I posted how I make fish cakes (or fish patties) which are really like crab cakes made with fish instead of crab. Well, I came up with a similar way to make chicken Parmesan which, although it certainly has more steps, comes out easier and tastier (in my opinion
I took boneless, skinless chicken breasts and pulsed them with onion slices in a food processor until they were broken up but not fine like hamburger meat. Put them in a bowl and added some chopped cilantro, a couple of spoons of mayo (for moisture but if you use thigh meat that might not be needed), some spoons of ground almond meal for bulk and texture and an egg. In the meantime, I mixed about
half a cup each of wheat bran and flaxseed meal together in another bowl. Then, I formed the chicken patties and dredged them in the bran/flaxseed and sauteed them in a little oil. I served them with a marinara sauce and parmesan cheese for topping.
I am making them for Easter dinner. So on my plate will be one of the patties with the sauce and cheese, Italian spinach (courtesy of our son
) and a couple of the salads we're also having. Guilt free.
And ... for others at the table, they can eat the angel hair pasta with the chicken and sauce. lol
