Oh, that's right. I forgot you'd said you were a waitress! I'm sure you're on your feet a lot! I was always a bread eater but I didn't care as much for potatoes. In any case, please understand that it would be easy to "tip the balance" in your health to complete diabetes if you are not mindful of your blood sugar. You are most probably insulin resistant at this point.
I will also add that it would benefit you if you did some strength training and stretching. I'm sure you lift a lot of trays, etc. during your work day but if you also engage in some simple dumb bell exercises (you can find lots of sites online, YouTube, etc.) to build muscle, your blood sugar will benefit as well.
Just knowing and understanding how your own metabolism works (and what your blood sugar is) will really help you avoid health complications down the road.
