1. This is basically an appetizer but could be a snack or part of lunch or dinner. Mix up a quarter of a package of 1/3 less fat cream cheese (I use Kraft because my store's brand has more carbs.) with some garlic powder and whatever herbs you like (dill, basil, oregano, etc.) and some minced onions or chives or the green ends of green onions. Adjust all these ingredients to your taste and mix really really well. Clean up some celery stalks and cut them into 3 or 4 inch lengths and then place a nice amount of the cream cheese mixture along the stalks. You can even sprinkle some crushed walnuts or almonds on top.
2. Now this can be a snack or even a dessert. Spread about
two tablespoons of natural peanut butter* on two squares of 70% dark chocolate (I really like the Lindt 70 % better than others.). The Lindt brand has about
8.5 carbs per two squares and the peanut butter would have about
5 gr. carbs. This could be addictive so don't overdo it or it will raise your blood sugar too much. I did eat this as I described and my blood sugar rose 8 points two hours after I ate it. (Lots of factors can affect the rise though so just be wise.)
* Natural peanut butter does not have any sugar, only peanuts and maybe salt. Make sure you read the label.
