Hi mufgem, welcome to the Diabetes Forum. First, I am really impressed that your doctor is not ignoring these blood tests. An A1c of 5.7 is an average of 117 and while that itself is not high, it's higher than a non-diabetic's average. With diabetes in the family, it is very wise to get control of your blood sugar now before it creeps higher.

Simply put, carbs raise blood sugar in everyone but depending on that person eating them, that's where we see the difference in how a body metabolizes them. A non-diabetic can utilize the blood sugar efficiently but others who are insulin resistant (like me) can't and instead of using the glucose or storing it correctly, it stays in the blood stream and over time this can cause damage to various organs. I believe the point at which damage occurs varies with the person but I also believe the parameters that are in the booklets given out by the ADA are much too high - this is why I am glad your own doctor is concerned about
your levels now
Personally I think if those higher spikes continue over time and become the norm, you'll be risking damage. (Read the link in my sig.) They are probably from what you eat: bread, pasta, cereal, pizza, crackers, cake - anything made with flour or sugar. So, if you at least cut back on that kind of food, your spikes will be lower. I'm not a doctor but I think keeping the blood sugar around 100 or lower before meals is better so it gives you some wiggle room, not permission to eat a plate of lasagna with bread though.
The reason your blood sugar stays elevated after a nap is that the body doesn't use up the blood sugar circulating. Being active does use it up. That's why runners eat a lot of pasta before a race.
I bet that your A1c is in the 5's because you do go to the gym! I would suggest keeping a journal of what you eat, when and your blood sugar right before you eat and 2 hours later.
