Hi! I'm glad you got that appointment. Don't stress about
not being able to cook. Honest. Most of my regular meals are really plain food. If it's chicken or any other meat, I'll do it in a pan with some onions and maybe some lemon juice, or in the oven the same way if it's the winter so it can warm up the kitchen. You can sprinkle any herb you have on the meat (or fish). I like lemon or lime because it adds tartness and cuts down on salt.
Same thing with vegetables. Cauliflower, broccoli, mushrooms can be eaten raw or cooked. If I'm eating spinach heated up with a touch of butter, then I'll put a few florets of raw cauliflower or broccoli on the table to eat along with the cooked spinach. It's a very simple way of preparation. I keep a lot of frozen vegetables for heating up. If you want to eat raw veggies, buy small quantities of fresh ones.
