zucchini lasagna

We just had this yesterday and it is really delicious. I did not miss the lasagne pasta in the least because it was so tasty, made with ground turkey, tomato sauce, oregano, ricotta, parmesan, everything else you'd expect in this dish. The zucchini is not peeled and is sliced lengthwise. If you like the slices thicker, of course you'll cut the zucchini thicker. One recipe says to quickly grill the slices on top of the stove to help remove the water content and not to cover it in the oven. There are many recipes online so you can find one to your liking; some even have a list of nutrients including carbs and calories.

Of course it has some carbs so a key is not to overload your plate but serve yourself a decent square. Along with a crisp green salad, it makes a very satisfying meal. smile

Sounds yum. My claim to fame is a decent stir fry. My ex was an awesome cook...is. I am not into it.

Winter here...i ache badly...it bitterly cold. HT

Yes, HT, stir fry! I made one last night from a recipe I found in the New York Times. It's ground turkey, green onions, fresh ginger and garlic and I added a handful of shredded cabbage (from a bag for cole slaw mix) and frozen murikami. Murikami are soy beans without the pods. All of this is easily found in your local supermarket. Mixed all together in a large pot, just cook it till it all looks done and serve it with riced cauliflower. Some of us put soy sauce on it, too.

This is also how I use leftover chicken or pork. I cut the meat into smaller pieces, saute up some onions, regular or green onions, add some shredded cabbage as above or spinach, green beans, artichoke hearts and the bite-size meat. Stir it around and add whatever spices you like. Lots of variations! smile

Nice. Variation city. That's what i like too. Noodke soup i am not bad at.

At the moment i am smashing bok choy...spinach and assoc. I love me mushrooms as well. Adding plenty of chili at the moment. HT.

There are so many great food choices available at the supermarket these days! 'fried rice' with riced cauliflower, pasta made from lentils and zucchini, etc. Every time I go I see more fun choices and most are very good! And just a few minutes to prepare. Lanie, your food sounds so good! I am the goddess of microwave these days though.

Darla, it's so easy to make some of the food we've been yakking about here. I use a large frying pan and put in pieces of whatever meat we're going to eat, then chopped up onions and any combo of the veggies I've listed in my posts. I've become a big fan of shredded cabbage but I buy a bag of it. It's usually labeled as cole slaw mix. I can't be bothered shredding cabbage myself. Anyway, it adds bulk to the meal and cabbage is really good for you. I don't find it has a particular taste so it doesn't take over the dish.

Good morning, HT and Darla! I'm no chef but I've always looked for ways to cook different food especially when our kids were young and would probably have preferred pizza every night. Now though, they're grown and are interested in 'healthy' food (and on their own) and I'm 70 and want to keep healthy despite dealing with diabetes! Hi lanie, darla et al. bought stacks of vegies today. Slowly you have inspired me to have a bit more of a cook up. I bought cabbage and cauliflower!! Spring onion i like bok cboy i enjoy brocoli something leafy green..name escapes me and sweet chili.
