Hmm, the dinner sounds perfect! Protein does not increase blood sugar unless there's a marinade or sauce that would have ingredients known to raise blood sugar. Fats, protein (meat, fish, poultry) eggs, vegetables like broccoli, cauliflower, mushrooms, zucchini, eggplant (aubergine), bell peppers all are great. So, it's surprising to me that his blood sugar was that high this morning.
Again, I would consult with his doctor and if I were him (your husband) I'd keep a food journal with testing blood sugar right before eating and about 2 hours after finishing. This will tell him how the food he's eating is making an impact on his blood sugar. There must be an explanation as to why his levels are that high and in my opinion I would not increase the metformin. This is a basic drug that helps the body metabolize carbs in particular because of insulin resistance.
I hope he can get those levels down.
