I'm so tickled to have my appetite back. I do love food. That made me wonder, have you had anything yummy to eat lately? What was it?
Tonight for the first time I made poached alaskan cod for dinner. Oh my gosh, I loved it. This is from a woman who barely likes fish. I wanted something easy for the digestion, and something I could make once a week to up my intake of healthy fish in my diet. Ding ding ding! Winner.
I just took a 2-quart sauce pan with lid, added about
1 or 2 inches of clean drinking quality water, chopped up half a carrot, half a stalk of celery, two slices of lemon, generous salt and pepper. Cooked the poaching liquid for 15-20 minutes. Then added the cod fillets for 10 minutes. Serve with baked potato, broccoli, and half a toasted hard roll. Butter on the cod. Yummmmmm. I could learn to like fish if it all tasted this mild and non-fishy.
