I found a "cool" VERY simple dessert last week, with the added plus of being high in potassium. Since I'm prone to leg/foot/toe cramping, I try to 'up' the fluids, potassium, and magnesium when my body acts up.
Take a ripe banana, peel it, then cut it in small (1/4 inch) slices. Freeze about
4 hours, then put in a food processor or blender and process til creamy (I had to add a bit of milk). And then you have...... Banana ice cream! I just tried this and it's pretty tasty. I'm thinking of adding a few nuts or a little coconut for something different. You can obviously add just about
anything you like.
This is cheaper and healthier than ice cream, and very cooling on a hot day. I just have to make sure I don't add any additions that aren't healthy. And I'm hoping it will chase away the leg, etc. cramping for a long while--I would prefer forever!
