I've forgotten who submitted the fiber muffin recipe. I'd sure appreciate
it if someone could find it and tell me where it is.

I am to looking for the muffin recipe, i saw it the other day but i am now unable to find it. If you find it please let me know where to look.

The 1-Minute Microwave Muffin

1/4 cup ground Flax seed
1/2 teaspoon Baking Powder
1 packet Splenda
1 teaspoon Cinnamon
½ teaspoon nutmeg
1 Egg
1 teaspoons Butter
Mix the dry ingredients in a large coffee cup. Add egg and butter; mix well. Microwave for 1-minute. Muffin pops right out
Only wish I found this sooner. Works wonders!!
I usually eat it around 7:30 and by the next morning, Eureka!!

  You could also replace the splenda with stevia.  Stevia is an herb and is very healthy.  It is not an artificial sweetener and therefore is far less likely to have a toxic/negative impact.  In fact, it is reported to balance blood sugar levels which is a plus.

  It is VERY sweet so you need to only use very little.  I like the brand by Herbal Select.  You can find it in health stores and many grocery stores who have a natural health section will also carry it.  I bake with it all the time.  I have a flax muffin recipe I use it in and it works really well.

  You guys probably already are aware of this, but just a reminder that drinking a good full glass of water with or close to a high fibre meal is important and will also amplify that wonderful 'eureka' effect all the more.   wink
