PB&J really sits well with me, HOWEVER there are lots of folks that can't handle peanuts (nuts) because of the fat content. It's a "good" fat, but still fatty and greasy none the less. I can't eat pistachios or I'll for sure have D. You can try turkey or chicken sandwiches. Beware of mayo, cheese and veggies (lettuce & tomatoes).
Do you have access to a microwave? Chicken breasts with rice and well cooked veggies are pretty safe. I don't have a problem with pork either... pork chops and mashed potatoes are great. Pork chops & apple sauce are a definite NO-NO.
granola bars? I really like them and they don't give me trouble. It would seem to be OK for IBSers, but I'm really not sure. Unless of course you have a wheat/gluten intolerance - Stay away!
