They have a lot of information on the package you can read. I think it is much more nutritionally dense than other bread. I don't think it matters which kind you get, but you can compare the labels. The Company is Food for Life, so you can probably find more at the web site http://www.foodforlife.com/

I hardly eat bread now, so I haven't paid a lot of attention. They have a yeast free variety as stated on the website you might try. Also ask your doctor about your concerns. Yeast is the next to the last ingredient on the loaf in my refrigerator, so I am not sure how significant it is. It probably depends on how much someone eats everyday.

We eat a lot of cornbread we make ourselves which doesn't have yeast.

I am also on a yeast free sugar free, you name it free diet and i can eat Ezekiel bread.  There is something about the sprouted grain it doesn't ferment.  I have a friend who had Candida for years and she explained that Yeast doesn't make yeast.

I know it when I eat something wrong!  I can do Ezekiel bread with no problem.  However, there are somethings that bother some people that won't bother another.

Tortillas sound great, can't wait to try them. My LLMD said only 2 slices of Ezekial bread per day.

I also love their Sprouted Whole Grain Cereal which I eat with strawberrys, honey and almond milk. Yum.
