Freeze-dried fruits & veggies make a good snack also. Some health food stores sell a variety of such foods, or you can make dehydrated fruit slices (apples, pears, peaches, etc.) and sprinkle a little cinnamon on them just prior to dehydrating. Slice the fruit into water that has some Vitamin C (Ascorbic Acid) powder added to help prevent browning.
