Avoiding gluten is only a part of the picture - the active infection (or herxing from die-off) will also cause symptoms and these symptoms won't necessarily disappear with the avoidance of gluten. Have you tried avoiding dairy as well? Dairy proteins are also thought to be pro-inflammatory, and it is the inflammation from the infection that slows down healing.
