If Lyme has been in remission but not entirely wiped out, certain things can trigger symtoms to reccur. Mold or other immune stressors can pile up and tip the body over the edge, causing symptoms again.
Have you tried eliminating nightshades from your diet? Nightshades have solanine, which adds to the neurotoxin load. They can (even without Lyme) cause fibro and/or arthritis symptons. See: http://www.noarthritis.com/
