My lyme presented as gut issues and neurological issues. I had various dxes through the years.. IBS-C, IBS-D, UC, Unknown Colitis.. and they presented with a host of symptoms.
After I had my last child I was put on IV and oral abx for a lowgrade fever that I developed during a very long labor. That caused my gut to completely rebel and resulted in Small intestine bacterial overgrowth.
I used the low fodmap diet to fight my way back. I also alternated in paleo, because grains were not working for me at all. Nuts were incredibly helpful, but the high meat, low fiber aspect of paleo was not a long term strategy to healing.. however it did starve out my SIBO.. unfortunately it gave me an overgrowth of E.coli and pretty much no other bugs in my intestine.
I added back in beans and a couple small servings of non gluten grains like quinoa and millet.. at this point I could get away with rice too as long as I dont over do it.
However, from looking at my blood under a microscope (and my doctors blood tests) we know Im having high ammonia issues.. likely caused by the lyme, mycoplasma and strep infections that I have.. but also, I believe, due to the high protein diet Ive been consuming. I also believe I have some issues with mycotoxins that create a more acidic environment.
Last week I started trying to turn my body more alkaline and the difference in my blood has been noticeable. In the morning, I take my wobenzym.. then I wait 45 minutes, drink a small cup of low acidity coffee with coconut cream and xylitol (cause I just dont want to have to give it up again, I gave it up for over a year!) and take my olive leaf, monolaurin and anantumul. Then I drink 6 oz of straight lemon juice (with a straw).. and I rinse my mouth out with baking soda water after. Coffee is the most acidic thing I willingly eat all day. Through the day I make sure to drink atleast 80 oz .. usually 100(I weigh 120) of alkaline or spring water.
For breakfast here is a sample of some of the things Ill eat..
a green smoothie
eggs with lots of alkaline veggies in a scramble (asparagus, onions, garlic, zucchini, etc)
almond flour muffins with some type of lower acidity fruit sweetened with stevia and maple syrup
fresh low acid, lower sugar fruits and a handful of nuts or some almond butter
almond flour pancakes
salad with a lemon based dressing
millet veggie stirfry with lotsa garlic
lettuce wraps with different veggie mixes.. or sometimes a creamy avocado or nut/seed based salad
root veggie bake with tofu
hummus and veggies
baked home made falafels with almond flour or buckwheat based wraps and tahini cuke sauce
handfuls of nuts
veggies and hummus or I make lots of different seed and nut based dips.. like a faux ranch dressing
chia coconut milk pudding
A couple times a week I will add 2-3 oz of organic pastured chicken to my stirfries or salads..
