You're welcome. I get mine at a natural foods store. I sometimes get a 25 lb. bag of it since we go through a lot. You might be able to get it online somewhere too, but I've never tried that. I did a search and came up with several brands of ground buckwheat. It seems the darker flours have the hull on the grain when they grind it, so that might be the darker flours. It likely changes the flavor. This is the mill I have, only mine is an older one and has a differently shaped bowl. The new shape is better. http://www.retsel.com/mill-rite.html It has served us very well, only needing a repair once in the 20 or more years we've had it. Some people use their Vitamix to grind grains, so if you have one, that's an option.
Our grain grinder gets a lot of use. My dh and I both had one when we met. They were both manually operated, but I had to switch to an electric one in order to keep up with his appetite. It has an optional hand crank, but I haven't used it.
I made some pancakes last night and used some coconut flour in place of the buckwheat and they turned out pretty good, so I'll do that from now on. I wouldn't have thought of doing that if I hadn't read this post, so thanks!
