I do a lot of 1 casserole dishes.
you can fry your meat (chicken, lamb, beef), ad some onions/garlic/spices/zucchini/bell pepper, let it fry and then add organic peeled tomatoes (fry the tomatoes well), then add snow peas, red beans, peas, mini corns, and then later on (sweet) potatoes. Let it all simmer on low fire. Serve with wild rice. It's only cleaning the veggies that is the largest part. It goes quickly.
Tajine recipes (you can find a lot on the internet). You put everything in tajine, put it on the stove or in the oven and leave it there until it's cooked.
You can prepare some herbal mixtures and freeze them (sjalots with garlic, peper, red peppers, salt - mix that) you can use them as a base for many dishes
Prepare some more on good days and then freeze the second portion. Like Spaghetti sauce, soup.
Chicken in oven: clean the chicken (I always wash it), make a herbal mixture to your likes (ginger goes well with chicken, or something with a lot of garlic), rub it in and put the rest in the chicken, put it on in a baking dish, some big chunks of onion, those small potatoes with skin, other vegetables to your likings, drizzle olive oil over it and put it in the oven.
