I wanted to address a few things:
Doxy alone is not good for a long standing Lyme infection, as it encourages the bacteria to go into treatment resistant forms - meaning it won't be effective.

should i look to find a different one for the other 2 week?" - This is crazy - yes you need to be on either the same probiotic or another one each day that you take the antibiotics.

Yes - just be sure that they are good sources. They need to be trustworthy to provide what you are actually buying and that the herbs are sourced from a good place.
You asked: "are the ones drinks in supermarket any good the yogurt drinks?"
Unflavored, unsweetened kefir can be used.
You asked: "Are you saying we SHOULD EAT SUGARS OR NOT EAT THEM?"
We should NOT eat them. Sugars increase our inflammation, and that can make pain and other symptoms worse. Plus, eating things with sugar will greatly increase the change of you getting yet another infection with Candida that would require more treatment.
So avoiding the sugar (like the desserts) in your meals are what's most important. You can only do what you can with your meals, but please do try to avoid sugars. Eat as many vegetables as you can though to help you feel more full and to get the nutrients that you need to help you heal.
If your husband is up to it, he could actually cook up some vegetables and add them to your meals once in a while. Don't feel bad though - you can only do what you can do.
