I could not be further from the carnivore diet, and the sugar in a piece of coffee cake would destroy me, too. I would bet it's mostly the sugar you are reacting to. A body that's not accustomed to sugar will react poorly to it, (and even moreso if you have issues with candida). Any baked goods - at best - contain processed grains and some form of sugar, so sadly I just smell them and walk on by. I content myself with the occasional piece of seasonal organic fruit, and even that sometimes is too much.
I'm curious which vegetables you react to, and how they are prepared.
And yes, you're right, vegan just means something is plant-based, not that it's healthy in other ways. Vegan junk food is still junk food.
And a lot of gluten-free substitutes are so processed that they cause reactions, too. People tend to do better eating unprocessed foods and as little sugar as possible, yet sadly those things can be the least available!
I hope that this flare passes quickly for you! I wish at least the coffee cake had been tasty. ;)
